While this is an interesting and controversial idea, it doesn't seem tenable. While disclosure is always a great thing, when it comes to personal behaviors, there is a potential here for public shaming of educators. It isn't clear how much control an individual may have on their overall carbon output/energy usage aside from their meat consumption habits, nor what the projected impact would be of disclosing this information and how it might change behavior of either the educator or the student.
