How would this milk compare in cost, taste and texture to milk already confected from soy or almonds? Or even compare to cow's milk? Could the milk be flavored and otherwise modified to allow companies to compete on taste, texture, cost, etc. much as vodka is marketed? Perhaps that is the way to get a producer or two interested in investing in the research and construction of a pilot plant. Show the benefits for market penetration of cow-free milk on purely economic terms. You might also modify your proposal to take into account the rapid increase in Chinese purchases of US milk products that have driven up the price of milk in the US. This might be a further incentive to lure a milk distributor/marketer into cowless milk manufacture.

The product substitution gets governed by its qualitative / quantified benefits, returns on investment and competitiveness. Cow milk is tested for generations by humanity. Cow less milk has to find acceptability in human body. But in what way the consumption of products and services are getting optimized is to be elaborated further.
